Abstract

The purpose of this research were (1) analyzed levels of Serum Glutamate Pyruvate Transaminase (SGPT) Rattus norvegicus Wistar strain with male sex after given tofu was soaked using aquadest, formalin and lemongrass (Cymbopogon citratus) leaf extract with variation of concentration of 20%, 40%, and 60%. (2) to know the concentration of lemongrass leaf extract as a natural tofu preservative that produces lowest levels of Serum Glutamate Pyruvate Transaminase (SGPT) in Rattus norvegicus Wistar strain. The type of this research was true experimental with the design of the randomized posttest only control group design. The samples in this research were 40 Rattus norvegicus Wistar strain that selected by simple random sampling technique. In this research there were positive control group (formalin), negative control group (aquadest), treatment group of lemongrass leaf extract of 20%, 40% and 60%. The feeding of tofu pellet form done for a month with a dose of 10% of body weight Rattus norvegicus and provision of water ad libitum. The results of research had been done showed that. (1) there was no difference of SGPT Rattus norvegicus strain of Wistar strain after tofu was soaked using aquades, formalin and lemongrass leaf extract with concentration variation of 20%, 40%, and 60%. (2) concentration lemongrass leaf extract as a natural preservative of tofu resulting in the lowest serum Glutamate Pyruvate Transaminase (SGPT) level in Rattus norvegicus Wistar strain with male sex that was at concentration 40% with mean of SGPT level 12,928U / L
