Higiene Sanitasi Pengolahan dan Penyajian Makanan Pada Kantin Sekolah Dasar Negeri di Kota Singaraja

Abstract

Penelitian ini termasuk dalam penelitian deskriptif yang bertujuan untuk mengetahui, (1) higiene sanitasi pengolahan dan penyajian makanan pada kantin SD Negeri di Kota Singaraja, (2) peran serta kepala sekolah dalam pengelolaan kantin sekolah dasar. Subjek dalam penelitian ini adalah Kepala Sekolah Dasar Negeri di Kota Singaraja sebanyak 26 orang dan pengelola kantin Sekolah Dasar Negeri di Kota Singaraja sebanyak 31 orang. Metode pengumpulan data yang digunakan dalam penelitian yaitu metode observasi, metode angket, dan metode dokumentasi, yang kemudian dianalisis secara statistik deskriptif. Hasil penelitian ini adalah, (1) higiene sanitasi pengolahan dan penyajian makanan pada kantin SD Negeri di Kota Singaraja berada pada kategori cukup karena dari 26 SD di Kota Singaraja hanya 5 SD yang memenuhi kriteria higiene sanitasi baik sedangkan 21 SD cukup memenuhi standar kriteria higiene sanitasi. (2) Dari segi pengawasan peran serta Kepala Sekolah dalam operasional kantin sekolah secara keseluruhan berada pada kategori sangat baik.

This research included in the descriptive research, the aimed to know: (1) hygiene sanitation in processing and presentation of food in the canteen of elementary school at Singaraja City. (2) the role of Headmaster for management canteen of elementary school. The subject of research was the Headmaster of elementary school at Singaraja City as much as twenty six people and person who manage the canteen of elementary school at Singaraja City as much as thirty one people. Data collection techniques used were observation method, questionnaire method and documentation method and then analyzed by statistical descriptive. The results this research showed that: (1) hygiene sanitation in processing and presentation of food in the canteen of elementary school at Singaraja City is classified into enough category because from twenty six canteen of elementary school at Singaraja City wich only five of elementary school have been good category of hygiene sanitation and while twenty one of elementary school have been enough category of hygiene sanitation. (2) in terms of the supervision of the role Headmaster in the management canteen of elementary school is classified into good category.
