REPRESENTASI IDENTITAS TIONGHOA MELALUI KULINER DI KELURAHAN KAMPUNG BUGIS, SINGARAJA, BALI SEBAGAI SUMBER MATERI AJAR SEJARAH SMA KELAS XII JURUSAN BAHASA

Abstract

Penelitian ini bertujuan untuk mengetahui (1) latar belakang representasi etnis Tionghoa di Kelurahan Kampung Bugis, Singaraja, Bali melalui kuliner; (2) jenis-jenis kuliner yang merepresentasikan identitas etnis Tionghoa di Kelurahan Kampung Bugis, Singaraja, Bali; dan (3) representasi identitas Tionghoa melalui kuliner di Kelurahan Kampung Bugis, Singaraja, Bali yang dijabarkan dalam silabus Sejarah SMA kelas XII jurusan Bahasa sebagai sumber materi ajar Sejarah. Penelitian ini menggunakan pendekatan kualitatif melalui langkah-langkah yaitu: (1) penentuan lokasi penelitian; (2) teknik penentuan informan; (3) teknik pengumpulan data (observasi, wawancara, studi dokumen dan studi pustaka); (4) validasi data; (5) teknik analisis data; dan (6) teknik penulisan hasil penelitian. Hasil penelitian menunjukkan bahwa latar belakang representasi identitas etnis Tionghoa di Kelurahan Kampung Bugis, Singaraja, Bali dikaji dari aspek kuliner ada dua faktor yang sangat berpengaruh yaitu faktor sistem kepercayaan etnis Tionghoa dan faktor sosial budaya di wilayah tersebut. Jenis-jenis kuliner Tionghoa yang merepresentasikan identitas mereka dapat dilihat pada sajian persembahan dalam upacara-upacara besarnya serta dalam makanan-makanan sehari-hari yang dijual secara umum. Nama-nama makanan khas Tionghoa biasanya mengandung makna tersirat berdasarkan bentuk, rasa maupun tektur makanannya. Kajian kuliner Tionghoa sebagai representasi identitas etnis tersebut dapat disisipkan serta dijabarkan dalam silabus Sejarah SMA kelas XII jurusan Bahasa untuk melengkapi materi ajar yang mengalami missing link pada masa Orde Baru (Soeharto) hingga Reformasi. Kajian ini dapat disisipkan dalam materi Sejarah dalam Standar Kompetensi “Merekonstruksi Perjuangan Bangsa Sejak Orde Baru Sampai Dengan Masa Reformasi”, dengan Kompetensi Dasar “Merekonstruksi Perkembangan Masyarakat Indonesia Sejak Orde Baru Sampai Dengan Masa Reformasi”.

This study aimed to determine (1) the representation background of Chinese ethnic at Kampung Bugis Village, Singaraja, Bali through culinary, (2) the various of cuisine that represents the Chinese ethnic identity at Kampung Bugis Village, Singaraja, Bali, and (3) representation Chinese identity through culinary at Kampung Bugis Village, Singaraja, Bali outlined in the History syllabus of XII class Language department of Senior High School as sources of history teaching materials. This study used a qualitative approach, through this measures namely: (1) determining the location of the study, (2) determination informant techniques, (3) data collection techniques (observation, interviews, documents and literature studies), (4) data validation, (5) data analysis techniques, and (6) research writing techniques. The results showed that the background representation of Chinese ethnic identity at Kampung Bugis Village, Singaraja, Bali assessed by the culinary aspect there are two factors very influence the factor of Chinese ethnic belief systems and socio-cultural factors in the region. The various of Chinese culinary who represent their identity can be seen in the grain offerings in ceremonies as well as the foods that are sold daily in general. The names of typical Chinese food usually contains the meaning implied by the shape, taste and texture of the food. Chinese culinary studies as a representation of the ethnic identity can be inserted and explained in History syllabus of XII class Language department of Senior High School to complement teaching materials that had a missing link in Orde Baru (Soeharto) until Reformasi (Reformation). This study can be inserted in the history material in the Standar Kompetensi (standard of competence) "Reconstructing the Nation Struggle since the Orde Baru until the Reformation", with Kompetensi Dasar (basic competence) "Reconstructing the development of Indonesian society since the Orde Baru until the Reformation"
