Developing a Textbook for Speaking Skill of English For Food and Beverage Service Subject Used by Tenth Grade Students at SMK Nusa Dua Sawan

Tujuan dari penelitian ini adalah: (1) untuk mendapatkan materi berbicara bahasa Inggris untuk pelajaran layanan makanan dan minuman yang digunakan oleh siswa kelas X di SMK Nusa Dua Sawan dan (2) untuk melengkapi materi berbicara bahasa Inggris untuk pelajaran layanan makanan dan minuman yang digunakan oleh siswa kelas X di SMK Nusa Dua Sawan. Jenis penelitian ini adalah penelitian dan pengembangan yang diadaptasi dari Ellis dan Levy (2008). Ada lima langkah yang digunakan dalam penelitian ini diantaranya, mengidentifikasi permasalahan, mendeskripsika tujuan, merancang produk, mengembangkan produk, menguji dan mengevaluasi produk. Instrumen yang digunakan untuk mengumpulkan data dalam penelitian ini adalah kuesioner siswa, pedoman wawancara, silabus, dan kuesioner penilaian ahli. Hasil dari kuesioner siswa dan wawancara guru menunjukkan bahwa buku ajar yang digunakan pada mata pelajaran layanan makanan dan minuman tidak dilengkapi dengan materi berbicara dalam bahasa Inggris. Berdasarkan hasil analisis kebutuhan, ada lima unit yang dikembangkan. Unit 1 adalah tentang menyambut tamu dan penanganan reservasi. Selanjutnya, materi mengantar dan memersilahkan tamu duduk tamu dibahas di Unit 2. Unit 3 fokus pada materi mengenai cara menjelaskan menu untuk tamu. Unit 4 mencakup cara untuk mengambil pesanan makanan dan minuman. Sementara itu, Unit 5 berisi ekspresi untuk memberikan rekomendasi dan menanggapi pertanyaan para tamu tentang menu.Kata Kunci : Buku pelajaran, Kemampuan berbicara, Layanan makan dan minuman, Pengembangan materi
The objectives of the study were: (1) to find out speaking materials for English for food and beverage service used by tenth grade students at SMK Nusa Dua Sawan and (2) to supplement speaking materials for English for food and beverage service used by tenth grade students at SMK Nusa Dua Sawan. The type of this study was research and development which was adapted from Ellis and Levy (2008). There were five steps used in this study including, Identify problems, describe objectives, design artifact, develop artifact, and test and evaluate artifact. The instruments used to collect the data in this study were students’ questionnaire, interview guidelines, syllabus, and expert judgment questionnaire. The result of students’ questionnaire and interview indicate that the textbook used in food and beverage service subject is not completed with speaking materials in English. Based on the result of the needs analysis, there are five units developed. Unit 1 is about welcoming and handling reservation. Furthermore, escorting and seating guests is discussed in Unit 2. Unit 3 mainly concerns with how to explain the menu to guests. Unit 4 covers the way to take food and beverage orders. Meanwhile, Unit 5 contains the expressions of giving recommendations and respond guests’ questions towards menu.
